Ingredients
CHICKPEA & BEAN CURRY
- 1 can Chickpeas
- 500 grams Beans (halved)
- 1 medium onion
- 4 cloves garlic
- 2cm piece fresh ginger
- 1 long red chilli
- 1 can diced tomatoes
- 1 cup coconut milk
- 2 tbsp Coconut Oil (or preferred oil)
- 1/2 teaspoon Cummin
- 1/2 teaspoon tumeric
- 1 teaspoon Paprika (hot or normal)
- 1 tbsp garam masala
- 1/2 teaspoon Cayenne (*optional)
- 2 bay leaves
- 1 teaspoon Himalayan Salt (or prefered salt)
- Juice of 1/2 a Lemon
- 1/4 cup fresh coriander

-Rinse & drain chickpeas
-Add peeled and halved onion,garlic, ginger & chill to thermomix "Closed lid"
Chop for 3 seconds / Speed 7 and scrape down sides
-Add coconut oil, salt, cummin, tumeric, paprika, garam masala, bay leaves & cayenne (optional) to thermomix "Closed lid"
saute for 8 minutes / 100° / speed 2
-Add lemon juice & tomatoes to thermomix "Closed lid"
cook for 8 minutes / 100° / speed 2
-Add chickpeas & halved beans, & coconut milk to thermomix "Closed lid"
Cook for 10 minutes / 100° / "Counter-clockwise operation" "Gentle stir setting"
Transfer to thermomix server
-Put basket into thermomix and measure 200grams rice
-Take basket out and rinse rice under the tap
-Put basket and rice back in the thermomix "Closed lid"
Add 900grams water to Thermomix
Cook for 15 minutes / Varoma / Speed 4
Serve curry on top of rice with a sprinke of fresh coriander.

If you want to add some flavour to the rice add 1 to 2 tablespoons of the thermomix vegie stock paste.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
