Ingredients
Carrot Falafels
- 180 grams carrots, 4cm lengths
- 400 grams chickpeas (rinsed and drained), (or 1 cup dried chickpeas, soaked in warm water 24 hours)
- 1 red onion, peeled and halved
- 3 cloves garlic
- 1/4 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/2 tsp Gluten Free Baking Powder, (you can make your own (EDC pg. 13))
- 3 tbsp rice flour, (you can make your own. Place rice in TM bowl on sp.10 for 1 minute)
- 2 egg whites
- 30 grams breadcrumbs, (and extra for coating. You may use gluten free breadcrumbs for a gluten free meal!!)
- vegetable oil

Place carrots in TM bowl and chop on sp.7 for 10 seconds. Remove to a small bowl.
Add onion and garlic and chop on sp.7 for 5 seconds. Scrape down. Saute 100, 4 mins, speed 1.
Turn the dial to speed 4 for 3 seconds, dropping your fresh herbs in to chop them.
Add carrots, chickpeas, paprika, cumin, baking powder, rice flour, egg-whites and fresh ground salt and pepper. Mix on sp.4 for 10 seconds. Scrape down.
Add 30gms of the bread crumbs.
Form mixture into burger patties between your palm of your hands - then roll in the bread-crumbs so they are coated.
Put in roasting pan, spray gently with oil. Cook at 200C (180 degrees fan forced) until brown.

Tip
You may wish to use your leftover egg yolks to make an accompanying garlic or herb mayonnaise Or custard!!
