Ingredients
- 3 onions quartered
- 5 cloves garlic
- 5 centimetres Ginger nob, (or 2 tsp minced ginger)
- 50 g oil
- 1 teaspoon cumin seed
- 1/2 teaspoon cayenne pepper
- 1 teaspoon turmeric powder
- 1 teaspoon Garam Masala (Everyday Cookbook)
- 800 g Tinned tomatoes
- 300 g pumpkin, (cubed)
- 2 Handfuls of baby spinich
- 1 teaspoon salt
- 2 cans Chickpeas drained

Place onions, garlic and ginger in bowl.
Turn lid to locked position "Closed lid" and pulse "Dough mode" several times until thoroughly chopped.
Add oil and cumin and cook for 10 minutes/100 degrees/speed 2.
Add cayenne pepper, turmeric, garma masala, tomatoes and salt. Cook for ten minutes/100 degrees/speed 2. Place basket on top to avoid splatters.
Add chick peas, pumpkin and baby spinich and cook for 15 minutes/100 degrees/ reverse "Counter-clockwise operation" speed 1.
Once finished, set aside and let flavours develop before serving

I made this and froze the leftovers, quick, simple and tasty.
SO DELICIOUS!I've made variations of this in the past on my own but loved doing it in my new thermy. It was slightly sweet and being vegan the whole family could eat it. The fact it has chickpeas and spinach is a double iron bonus! I halved the recipe and it was enough for family of four (2 bigs, 2 littles) without leftovers (which is sad).
Absolutely love this recipe!!! We've had it 3 times in 2 weeks. Added some broad beans out of the veg patch too. Thanks for an awesome recipe.
Just happened to have all the ingredients handy so made this curry for dinner. I halved all the ingredients and it made enough for 2 meals for 2 of us when served with rice and pappadums. My husband cooked a chicken breast to serve along with his. The curry was easy to make and quite tasty.
