Ingredients

Pancake batter

  • 130 g cheddar cheese, cubed
  • 1 carrot, Peeled & cut into roughly 2cm rounds
  • Half head of broccoli
  • 1 Celery stick, Roughly chopped
  • 1 zucchini, Ends removed, roughly chopped into rounds
  • Half onion, Peeled
  • Herbamare or Salt & Pepper, To taste
  • 2 eggs
  • 310 g Self Raising Flour
  • 360 g Milk
  • Butter, For frying

Recipe's preparation

  1. 1. Add cheese to bowl & grate 8 secs/Speed 7. Set aside. No need to clean bowl.

     

    2. Add Carrot, half head of Broccoli, celery stick, Zucchini & onion to bowl. Set turbo to 2 secs & turbo 3 times. Scrape down lid and sides then repeat turbo 3 more times. Scrape down sides & check consistency. You need it to be almost like a paste so repeat if you think it needs a bit more. 

     

    3. Season vegetable mixture quite well

     

    4. Add eggs, self raising flour, milk & reserved grated cheese. Mix for 10 secs/Speed 5. Scrape down sides and mix for a further 10 secs/speed 5.

     

    5. Heat butter in a non stick frypan on medium heat. Add batter to pan & form pancakes (i usually add 3 at a time). Fry until bubbles appear in batter then flip over & repeat or until golden brown 

     

    6. Serve & enjoy tmrc_emoticons.)

Tip

 

You can pretty much use any veggies for this. I have listed what I have used as I know these veggies work well. As long as you end up with roughly 2 cups of chopped veggies. My Children are a bit scared of veggies so I find the smoother the consistency of the paste, the better. 

 

I find Herbamare works really well with this recipe as it gives the veggies a really nice flavour. You'll find this in the health food section of most major supermarkets or health food shops.

 

I used butter for frying but I'm sure coconut oil, olive oil etc would also work.

 

These pancakes are great with relish or tomato sauce

    Just made these - quick, easy and delish! We had no zucchini, tho. my 8 yr old enjoyed them, as did hubby and I. Will make again. Thank you!
