Ingredients

Casserole

  • 1 can corn kernels, drained
  • 1 can French beans, drained
  • 75 g celery, roughly chopped
  • 2 small onion, quartered
  • 1/2 cup capsicum, chopped
  • 100 g cup sharp cheese, grated in TMX
  • 250 g sour cream
  • salt and pepper to taste

Topping

  • 1/2 box Ritz crackers
  • 125 g Butter, at room temperature
  • 100 g almonds

Recipe's preparation

    Topping
  1. Add all topping ingredients into TMX bowl. 

  2. Blitz with turbo button a couple of times then check - you want the biscuits crumbly, but not too powdery.  Set aside.  No need to rinse out bowl.

  3. Casserole
  4. Preheat oven to 180 degrees.  Grease a casserole dish.


    Chop sharp cheese and set aside.


    This dish is ideal for leftover vegetables that have been cooked in the Varoma.  If using beans, capsicums, onions and celery that has already been cooked in the Varoma, you only need to stir them slowly through the other ingredients, on reverse, prior to putting in the oven.


    If beginning with raw vegetables, then chop all except corn and beans in TMX bowl on speed 4 or 5 for 3 seconds then add 20g olive oil to saute in bowl for three minutes at 100 degrees on speed 2.


    Add corn and beans, cheese, sour cream, salt and pepper to other vegetables and stir 1 minute on reverse at speed 1.


    Pour into greased casserole dish and spread topping on evenly.

  5. Bake in moderate oven (180 degrees) for 45 minutes.


     

Tip

Converted by Roslyn Teirney from a recipe shared by Mrs Edward Schlaefer - Columbia, South Carolina, USA, 1977.  I find this crumble-type casserole very useful for using up leftover veges after a roast dinner too.  I sometimes even include leftover dip.  There is a pleasant contrast between the creamy sauce with the vegetables and the crunchy topping.  The original recipe called for a can of undiluted celery soup in the casserole, but I prefer to leave that out.
