- 500g chopped jap pumpkin, chunky not to small
- 1tsp ginger,cumin,coriander,tumeric,paprika, dried 1tsp each
- 3 Peeled Garlic Cloves
- 1 can chopped tomatos
- 1can water
- 1tbs vegtable stock edc
- 1 jalepeno chilli chopped, you could use fresh
- 1cup red lentils
- 1 salt pepper to taste
- 1 lime
- 1 sour cream or nat yoghurt to serve, add extra calories

chop onions and garlic 2-3secs speed 4 scrape down add oil and cook 5mins 120/speed1.5
add spices and pumpkin and cook 1mins/120/speed 1.5/rev
add tomato and fill can with water add that plus lentils/stock/season
cook 15-20mins/100/rev/speed soft
cooking time will depend on sixe pumpkin it breaks up bit but that adds to thicken sauce
serve with blob yoghurt or sour cream and sprinkle with coriander/mint or basil i used purple purple basil cos thats what i had in garden.also squeeze lime

Tip
i served with couple papadoms add calories for them and yoghurt if calorie counting.
the curry is better next day as flavour develops you can add little more water to reheat
its lovely heated in frying pan crack couple eggs in and cover for 5mins for breakfast

Was given a pumpkin, something I don't normally cook. Love it!
Delicious ... used can of lentils, added tsp garam marsala to spices and used tsp minced chilli in place of jalepeno.
Pretty good and easy. My pumpkin was too chunky so took longer. Will make smaller chunks next time... also added 1 tbsp korma curry paste for more flavour

Was going to get takeaway as I wasn't feeling well to cook but found this recipe and I had all the ingredients! Yay! Delicious, quick to prepare and nutritious. Served with rice and a dollop of natural yoghurt. Thanks so much for sharing!

Easy healthy and tasty
I made this afternoon and substituted half the pumpkin with capsicum and some carrot. I also substituted the fresh chilli with half a tsp of chilli powder. Very yummy!
this is an amazing dish, the pumpkin gives it substance. yoghurt on top, perfect. will try it with the kids.
