Ingredients
Risotto
- 2 clove garlic
- 1/2 --- red onion
- 1 chorizo sausage
- 250 g arborio rice
- 100 g white wine
- 120 g sliced mushrooms
- 800 g water
- 300 g Diced chicken breast or thigh
- 5 anchovies
- 2 tablespoon TMX vege stock concentrate
- 20 g oil
- 70 g parmesan
- 12 Baby Spinach Leaves

Grate parmesan 10 sec/sp 9. Set aside.
Chop garlic, onion and chorizo for 4sec/sp 5 Add oil and saute 5 min/100/sp 1
Add rice and wine and cook 3 min/100/"Counter-clockwise operation" sp 1
Add remining ingredients and cook for 17 min/100 deg/"Counter-clockwise operation" /sp 1
Stir through parmesan and spinach leaves and allow to rest in ThermoServer for 3-4 minutes before serving.

Love this risotto. It freezes well too
Hands down the best risotto I've made so far. AMAZING. I used half the amount of chorizo and added bacon. SOOOOO TASTY. The OH loved it too and told me to add it to the favourites list.

This dish is my new favourite Thermo meal. It is sooooo tasty - my one year old had two servings.
I added zucchini in step 2. I also added a red capsicum to increase veggie load. I cooked for an extra 5 mins and took the measuring cup off so it would thicken further.

This is my favourite rissotto by far. The only modification I make is I leave the chorizto in pieces not blitz it up at all as my husbands likes it chunky. Great flavours, fast and easy to make. The whole family loves it.
We have just had this for dinner, my husband wasn't too excited to be having Risotto as he's not a big fan, but I had some roast chicken I needed to use up. Final diagnoses by hubby was, that's the best risotto you've made so far
We love this recipe. Our favourite 'go to' when we don't know what to cook and don't have much time! I have omitted anchovies, used bacon instead of chorizo and added sundried tomatoes at various times. All awesome combinations!
