Ingredients

  • 1 bunch parsley, fresh
  • 70 g parmesan
  • 1 --- Large Brown Onion
  • 2 cloves garlic
  • 25 g olive oil
  • 50 g white wine
  • 350 g arborio rice
  • 900 g chicken stock
  • 450 g Raw Prawns, Peeled and Tailed
  • 2 --- Cups baby spinach leaves
  • 70 g sour cream
  • 1/2 Lemon Juiced
  • Salt and pepper

Recipe's preparation

  1. Method:

    Add parsley and chop for 5 seconds on speed 6. Set aside.

    Add Parmesan and grate for 5 seconds on speed 7. Set aside with parsley.

    Add garlic and onion and chop for 5 seconds on speed 5.

    Scrape down sides, add oil  and saute for 3 minutes, 100 degrees, reverse speed 1.

    Insert butterfly. Add rice and wine and saute for 2 minutes, 100 degrees, reverse speed 1.

    Add stock and cook for 14 minutes, 100 degrees, reverse speed 1.

    Add prawns and baby spinich leaves and cook for 1 minute and 30 seconds, 100 degrees, reverse speed 1.

    Add sour cream,, lemon juice, Parmesan, parsley, salt and pepper and mix on reverse speed 2-3 for 5 seconds.

    Place in thermoserver and let stand for approx 10 minutes.

    Notes:

    Don't  add the prawns any earlier.  They are easily overcooked in the thermomix. They will cook through resting in the thermoserver.

    It was very good, Idoubled the garlic and didnt have any white wine so didnt use it. Still came out great. Definitely making again

    Sorry was it meant to be 90 grams of christen stock past. Couldn't possibly be 900 grams

    My partner and I just loved this. I added 2 Birdseye chillies as we like it hot, though it definately needed more. I also added more garlic and basil leaves as suggested which made it taste really good. The only mistake I nearly made, but caught myself just in time, was I went to add 900g of chicken stock concentrate and I thought the rice won’t cook and the dish will be way too strong 🤔 I realised the recipe said chicken stock not concentrate so I added just under 2 tablespoons of concentrate to 900 ml of water and it turned out fantastic.

    Next time though I will try to halve all ingredients as it made just way too much for my partner and I. Or I’ll use this recipe when I have guests over for dinner

    A huge hit in my house tonight. I used 4 cloves of garlic, 300g of rice and added calamari, peas and edamame. Delicious!

    This is amazing and so easy to make. Used cream instead of sour cream as it was all I had. Would add another clove of garlic next time
