  • 180 grams brown rice, rinsed
  • 900 grams water
  • salt to taste
  • 5 grams olive oil
  • 1 red capsicum, diced
  • 1 x 400 gram tin red kidney beans, rinsed and drained
  • 1 x 400 gram tin corn kernels, drained
  • 1 large tomato, diced
  • 1 small red onion, peeled and diced
  • 1/2 cup roughly chopped corriander
  • 30-40 grams lemon or lime juice
  • 20 grams olive oil, extra
  • 2 teaspoons taco seasoning
  • 1/2 tsp ground cumin
  • 1/2 tsp Garlic powder
  • 1/2 tsp sugar
  • S & P, to taste

Recipe's preparation

    Prepare rice
  1. 1. Place water into mixing bowl.

    2. Add rice to simmering basket and place inside mixing bowl.

    3. Cook on Varoma/30-35 mins/ sp 2 or until cooked.

    4. Rinse to cool and set aside.

  2. Dressing
  3. 1. Place lemon juice, oil, taco seasoning, cumin, garlic, sugar and S & P in a large bowl and whisk to combine.

  4. Assembly
  5. 1. And all the ingredients to the bowl, reserve a little corriander for garnish.

    2. Toss to combine and sprinkle with extra corriander to garnish.
