  • 1100 grams water
  • 1 tablespoon Veg Stock Paste (EDC)
  • 50 grams pine nut
  • 200 grams butternut pumpkin
  • 1 bunch Baby Spinach Leaves

Recipe's preparation

  1. Cut pumpkin into 2 cm cubes.

  2. Place garlic and onion in bowl and chop 3 sec/speed 7. Scrape down sides of bowl.

  3. Add oil and saute 3 min/Varoma/speed 1.

  4. insert butterfly. Add spelt grain, water, stock and pine nuts And cook 50 min/100deg/Counter-clockwise operation"Counter-clockwise operation" /speed 1. Add pumpkin with 20 minutes remaining.

  5. Line thermoserver with spinach leaves.

  6. Pour into a thermoserver and allow to rest for a minimum. Of 5 mins.

Tip

Rinse spelt grain.

    A nice, easy recipe. I used brown rice, added peas and reduced the water by 100g. It turned out well, even my fussy toddler ate some!

    This makes a slightly runny risotto which we prefer, you could reduce the water by 100g. this would also work well with brown rice if you don't have spelt grain. We accidentry purchased 5kg of spelt grain instead of flour and finding alternative uses tmrc_emoticons.;-) It is quite yum!
