Ingredients
- 50 g Parmesan cheese, - cubed
- !/2 medium onion
- 2 spring onions
- 50 g olive oil
- 400 g arborio rice
- 100 g white wine
- 2 tabs vegetable stock concentrate
- 1000 g water, - including brine drained from tuna
- 1/2 cup lemon juice
- 100 g cubed pumpkin
- 150 g frozen peas
- 425 g can of tuna, in brine
- 20 g Butter, (optional)

Place parmesan cheese in TM bowl and pulverise 10 seconds on speed 9 - set aside.
Place onion and spring onion in bowl and chop 2 -3 seconds on speed 7. Add oil and saute for 2 minutes at 100 degrees C on speed 1 with MC off.
Insert Butterfly, add rice and wine to TM bowl and saute 2 minutes at 100 degrees C on Reverse +Speed soft.
Add stock, lemon juice and water, pumpkin and peas. Cook for 17 minutes at 100 degrees C on Reverse + Speed soft.
Add drained tuna 2 minutes before end of cooking time. Pour into ThermoServer and stir through parmesan cheese and butter. Allow to rest at least five minutes before serving.

You will notice that I used the TM Everyday Recipe book for the basic method, Just changed a few of the ingredients.

Delicious.
Great flavour. I only used the juice of one large lemon. I also added more pumpkin and less peas. Next time I make this I will add the peas at the same time as the tuna. We also grated additional Parmesan on top of the risotto in our individual bowls. Will make this again for sure.
Delicious and easy - I used 1/3 cup lemon juice and smoked tuna. Make sure pumpkin is chopped reasonably small - about 1 cm cubes.

Not sure if I mentioned it when I posted the recipe, but in my house there were leftovers, which were great the next day, fried in a little butter! Maybe not the healthiest of options, but yummy anyway!

Thanks for your comment, Flanas, Obviously the lemon strength is a personal thing - I like things lemony so perhaps I made it a bit strong for most people.

Thanks for the recipe! My first time making it, came out lovely, although it barely fit in the mixing bowl by the time I got to the end and added the tuna (filled right up to the top of the bowl)! Tasted great, although personally I found the lemon taste to be a bit strong, so I might use a bit less next time. Family loved it We got four very large servings out of the recipe, so it would make a couple of meals for a small family.
