The best Apricot Chutney ever!
Absolutely delicious. Could have eaten it by the spoonful.
Great taste but more saucy than chutney like. I stewed another 150g of apricots and added to the bowl before further cook for another 5 mins to make more of a chutney.
A great use of fresh apricots. Very runny but delicious. I used it for a sauce and in apricot chicken with a can of coconut cream.
I have now made this recipe twice with similar results. The outcome is delicious (the second time I spiced it up a little with chili) but much more like a spicy apricot sauce than chutney. I know I must be doing something wrong as I also end up with 3 x 300 ml jars and 3 x 200 ml bottles of sauce, although this may be OK as the recipe indicates an outcome of 3 bottles without specifying their size. Am I doing something wrong or is a sauce-like consistency the usual outcome?
