Avocado and Lemongrass Dip

  • 150 g avocado
  • 150 g cream cheese
  • 1 Lemongrass stalk, (peel outerleaves and take off the end)
  • 1 pinch salt cod
  • 1 small squeeze of lemon juice, (stops avocado from browning)

Recipe's preparation

  1. Place lemongrass and salt into mixing bowl and blitz by pulsing the Turbo button 3-4 times.  Scrape down the side of bowl in between and blitz until lemongrass is very fine.

  2. Add avocado, creeam cheese and lemon juice and blitz by pulsing the Turbo button 2-3 times until desired consistency.

Tip

I prefer the consistency slightly chunky to add some texture.  Best served with crackers.

    Absolutely delishes!!
    I did the recipe twice and squeezed a whole small lemon into it. Also used dry lemongrass (about half a tsp) as I didnt have fresh, worked well and was very refreshing and yumm Lol

    tmrc_emoticons.) Love finding recipes that match what's left over in fridge.  Just made this yummy dip ready for tonights drinks.........that's if it lasts that long.  After turboing lemon grass for a bit, I wizzed it on 9 for about 10 secs and it was fine as sawdust.

    I used frozen avo as I was given it and it was fantastic, make sure lemon grass is really fine.

    Tested this at work yesterday and it was a hit!

    I would recommend making sure the lemon grass was really blitzed well as I had a few longer bits of stalk in a couple of mouthfuls which wasn't too nice. That of course was not a problem with the recipe, just a tip for the next time I make it... which will be very soon!  Love
