Ingredients
Salad
- 120 g dried apricots
- 85 g sultanas
- 200 g couscous
- 230 g cold water
- 1 orange
- 75 g honey
- 1 onion
- 2 cloves garlic
- 35 g extra virgin olive oil
- 1/4 tsp ground cinnamon
- 1/2 lemon, Peeled with pith removed
- 5 sprigs fresh mint leaves
- 4 heaped tablespoons pine nuts, toasted

Place apricots in mixing bowl and chop speed 6 / 3 seconds.
Place couscous, sultanas and chopped apricots into Thermosever. Add cold water, stir and set aside.
Place onion, garlic and mint into mixing bowl speed 6 / 3 seconds. Transfer chopped ingredients to Thermosever, add toasted pine nuts and stir through.
Add orange, lemon, oil, cinnamon and honey into mixing bowl to make dressing speed 9 / 10 seconds. (Make sure you add honey last)
Pour dressing over couscous salad and stir through.
Salad ready to serve

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Thanks Jo, spring onion works well. Even red onion is good, raw or lightly fryed.

very tasty,but not sure about the onion, i used a white onion maybe i will use spring onion next time.
