Ingredients

Salad

  • 160 grams quinoa, rinsed
  • 1 Red apple, diced
  • 60 grams pecans
  • 80 grams sundried tomatoe strips in oil, drained
  • 70 grams dried cranberries
  • 20 grams oil
  • 1 teaspoon salt

Dressing

  • 10 grams coconut oil
  • 15 grams Maple syrup
  • 1/2 lemon, Juiced
  • 1 sprig basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Recipe's preparation

    Salad
  1. add 900g water and oil to TM bowl. Place rinsed quinoa into tm basket and add to TM bowl. Cook for 20 mins/Varoma/Spd2, at end of cooking time fluff with a fork, set aside in Salad Bowl and allow to cool.

  2. Clean & dry bowl, add pecans and chop for 1-2 sec spd 4, add to salad bowl.

  3. Add to TM bowl semi dried tomatoes & cranberries and chop for 2-3 sec spd 7 add to Salad Bowl.

  4. Add diced apple to salad bowl

  5. Dressing
  6.  add all dressing ingredients to TM bowl and blend for 5-6 sec spd 7. Pour dressing over ingredients in Salad Bowl and stir to combine.

  7. Salad can be served warm or cold.

  8. Storage - keep refrigerated covered for up to2 days

    Awesome salad! Made a few times now and always a hit. Only change I make is using herb infused olive oil instead of the coconut oil.

    this was lovely, easy to make, great flavour combination. next time i might try less quinoa and add some salad greens to lighten it up.
    was amazing the next day too (and i hate eating next day salad).

    Loved this salad - I didn't have pecans so swapped with walnuts (careful not to mix as long as they mush easier than pecans!!!) and didn't have basil so left it out. I wanted to bulk this up as I had quite a few people to cater for so added in another apple and 2 sticks of celery as well as a handful of feta. Yummy thank you for a delicious different salad.
