onion
- 1 brown onion, peeled and cut in half
- 2 1/2 cups milk
- 2 1/4 cups water
- 2 1/2 tablespoons Butter
- 1/3 cup plain flour
- 2 chicken stock cubes
- 1/4 cauliflower, roughly chopped
- 1 pinch Nutmeg
- pepper
- salt
- 30 grams olive oil

- Place onion into mixing bowl and chop 3 secs / speed 7. Scrape down sides.
- Add oil and saute 8 mins / varoma / speed 1.
- Remove onion from mixing bowl. Rinse and dry mixing bowl.
- put flour, butter and milk in mixing bowl. Cook 7 mins / 90 Deg / Speed 4.
- Add onion, cauliflower, water, chicken stock cubes, nutmeg, salt, and pepper. Cook 20 mins / 100 Deg / Speed 1.
- Blend for 1 min / speed 9 - gradually increasing speed.
Cauliflower Soup
Tip
Serve with a dash of cream and chives if desired.
