Ingredients

  • 50 g Butter, or oil
  • 100 g onion, peeled and halved
  • 400 g celeriac, peeled and chopped into large pieces
  • 400 g parsnip or carrot or a mixture, peeled and rough chopped
  • 1250 g whiite chicken stock, or 2tabs TM stock concentrate and 1250 gm water
  • salt and pepper to taste

Recipe's preparation

  1. Add rough chopped vegetables to TM bowl, chop 7 secs speed 7.

  2. Add butter or oil and sauté 100˚C, 6 mins, speed 1. Scape down sides several times with TM spatula during cooking.

  3.  

    1. Add chicken stock or stock concentrate and water. Cook 100˚C, Speed 1, 20 mins.

     

  4. Blend 10 secs, by gradually going from Speed 1 to 9.

  5.  

    1. Season to taste and serve.

     

Tip

 If making celeriac and parsnip soup white chicken stock works best in retaining the white colour. 


If made with carrot instead of parsnip this is quite a sweet soup.


This is my conversion of a Celeriac and Parsnip Soup recipe posted on the ABC 936 website by Karen Goodwin-Roberts in 2005. The original included parsnip chips. For simplicity I have not included these in this conversion.

    Nice soup. I did few tweaks to it though. I chopped the onion separately and sauted first. Then added the veggies and chopped. Also reduced the stock to 900g and added a handful of cashews prior blending to give it some creamy texture and flavour

    Hi Margaret .... I usually like to make a recipe as is the first time and then tweek for personal preference later.... Part way thru this and discovered I was out of stock concentrate on any description .... So I added a big handful of fresh sage ( because I love it and hey sage and parsnip ... A match made in heaven) ... and some bacon ( I had some that needed using ) .... My new favourite soup. I will make sure I have all the ingredients next time and make it as you intended ....but it's going to be hard to beat

    Delicious..and so easy. 

    Have made it again adding pumpkin and carrot instead of parsnip. Plus always add garlic.....

    Very yummy, easy recipe.  I was a bit lazy and didn't do the saute.  Was still a beautiful, flavoursome soup.  I also added a bit of nutmeg, which was lovely.

    Hi Margaret, I made this soup last week for my visitors and everyone was very impressed, it was extremely easy, tasted great and it was good to be able to use a celeriac, given that they are so good for you, full of B vitamins. Congratulations and thank you for such a lovely recipe.
