  • 100 g Bacon, diced, or 2 rashes
  • 1 onion
  • 20 g oilve oil
  • 600 g sweet potato (peeled), chopped
  • 500 g chicken stock
  • 50 g cream

Recipe's preparation

    Creamy Sweet Potato and Bacon Soup
  1. 1.Dice bacon up ( as shown in photo) and cook off 4min/Varoma/Counter-clockwise operation"Counter-clockwise operation" Speed 2.

    Then remove bacon from bowl to add later.

     

  2. 2. Using same bowl unwashed chop onion 3sec/speed 7, then add oil and cook off 3min/Varoma/Speed2.

     

    3. Add sweet potato and chop up 7sec/Speed 7. (Scraping bowl down after)

     

    4. Add Stock and cook for 20 min/100/Speed 2

     

    5. Season with pepper and blitz 1min/speed 9

     

    6. Add bacon back into bowl and add cream mix for 10 sec/Counter-clockwise operation"Counter-clockwise operation" /Speed2.

     

     

     

Tip

If you rather not have the bacon pieces in the soup add the onion and oil at step one, then continue to step three.

 

Also if you have a bit over or under the weight of sweet potato that is fine just make sure the liquid is 100gm less of your total weight.

    Delicious soup! I added the curry powder as was suggested, and added in some shredded chicken! I also used Coconut Cream instead of cream to make this dairy free. Will be a staple this winter!

    Delicious! I added 2 garlic cloves with the onion: superb flavour and such a warming soup on a cold day. Thanks for a beautiful and super easy recipe!

    Absolutely delicious. I did as others had suggested and added curry, I also left the bacon in the bowl the whole time. loved it.

    This is sooooooo yummy!!! I didn't add the cream as I wanted to freeze it for work lunches, and I also added a teaspoon of curry powder with the onion. So good, and I will be making this regularly over the winter months! Thank you for a wonderful recipe tmrc_emoticons.)

    Love this one. This is a very easy recipe and so tasty, although I did change a few things. I cooked the bacon with the onion and I added garlic and 1/2 a teaspoon of curry powder in the first step. Left everything else the same. This is now my go to recipe when I am in a hurry. Yum! I am just loving my thermo.

    This is a great tasting soup, yummy flavours. Will be making lots of this over winter  tmrc_emoticons.) One thing i did differently was after step 6, i took the reverse button off and did another 10 seconds on speed 2. This chopped some of the bacon and brought out more of the bacon flavour into the soup tmrc_emoticons.)
