Ingredients
- 1 onion, quartered
- 2 garlic
- 1 bunch basil
- 4 sprigs Thyme
- 1/2 leek, chopped
- 1 bunch English spinach leaves
- 1 Swede, chopped
- 1 carrot, chopped, no need to peel
- 1 parsnip, chopped
- 1 potato, chopped
- 1 sweet potato, chopped
- 2 celery sticks, chopped
- 500g chicken stock
- 3 mushrooms, chopped
- 1 TM stock
- 250g water
- 300g Cooked Chicken (shredded), I used leftovers from "best roast chook ever"
- 25g olive oil

Place onion, garlic and herbs in TM bowl and chop on speed 7 for 5 secondds. Scrape down sides. Add olive oil and cook on 100 degrees for 3 mins speed 1. Add half chopped veg and chop further for 5 secs on speed 7. Add the other half and repeat. Dont worry if they are not too chopped as you can do more once it is cooked. Add both stocks and water, careful not to fill over the 2 litre mark. Cook on 100 degrees for 20 min speed 1. Add the shredded cooked chicken after about 15 minutes.
One cooked, slowly start to blend the soup, depending how chunky you want it. Start slowly on speed one and very gradually work up to about speed 3-4. I holds the TM lid on with a tea towel just in case. Use caution as the soup is hot.

I made this again today without the potato, sede or turnip. Only used half a sweet potato and added parsley. I added kale and beetroot leaves instead of spinach and I also added raw chicken cubes at the same time as the vege. I also ommited the TM stock, using only 4 cups of chicken stock. It has turned out fantastic! So yum!
