Ingredients

  • 50 g spinach, (I use frozen blocks)
  • 40 gram brown onion
  • 2 bacon rashers
  • 25 gram olive oil
  • 1 tablespoon Vegetable Stock Concentrate Paste
  • 400 gram mixed vegetables, (eg. Carrot, Zucchini, Broccoli, Pumpkin, Sweet Potato - cut 2cm)
  • 3 sprig Basil leaves, Roughly torn
  • 400 grams can Diced Tomatoes
  • 50 gram risoni, or small pasta
  • 700 gram water
  • 1 pinch white pepper

Recipe's preparation

  1. Defrost spinach cubes (20 secs microwave)

  2. Add Onion & Bacon to mixing bowl and chop 3 seconds, sp 7.

  3. Add Olive Oil and saute 3 min, 120, Reverse Sp 1.

  4. Add Vegetables, can Tomatoes, Spinach, Basil, Stock Cocentrate & Water and cook 15 min, 100, Reverse Sp 1.

  5. Add sprinkle of White Pepper (I don't think salt is needed due to bacon & stock) and Risoni and cook 8 mins, 100, Reverse Sp 1.

  6. Transfer to Thermoserver and let sit for further 5 - 10 min before serving.  Enjoy tmrc_emoticons.)

Tip

** If you don't want to cut your vegetables (Í like mine a quite chunky) then you can add these first and chop for a 1-2 seconds/sp 5 for desired chop.

** I use only 2 rashers of Bacon as this delivers enough flavour in conjunction with Veg stock, anymore and your Soup will be too salty.

    So tonight I added extra bacon and didn't add a tin of tomatoes... instead I added 3.5 chopped tomatoes.

    It COMPLETELY changed the taste. I wouldn't recommend more than two rashers of bacon and definitely use a can of tomatoes, instead of frash ones.

    I put pasta in the first time, but didn't the next time, just added more veg. I feel like the pasta makes it slightly less healthy and doesn't really add to the taste, so I leave it out.

    Other than that, this soup is very MORE-ish... once I start on it, I can't stop and this is the fourth time I've made this soup in a fortnight.

    This soup is delicious! I added a bit more pasta, had no spinach (so used whatever veg I had), and subbed dried basil for fresh. Quite quick to make, too. Thank you!

    This was absolutely delicious and so quick and easy to make!  I didn't have the frozen spinach, so used fresh instead - did not adversely change the flavour or texture of the soup.

    Devoured by 1 and 4 year old daughters, my husband and myself!  Great to get a good feed of veges packed full of flavour.

    Will definitely be making this again!
