Ingredients
Pumpkin and Leek Soup
- 1 onion, halved
- 20 g olive oil
- 500 g butternut pumpkin, peeled and roughly cubed
- 100 g leek, cut into chunks
- 100 g carrot, cut into chunks
- 500 g water
- 20 g TM stock concentrate
- 30 g coconut cream
- cracked pepper, to serve
- basil or chives, to serve
- goats cheese, to serve (optional)

1. Place onion into bowl and chop for 3 seconds / speed 7
2. Add olive oil and sauté for 3 minutes / varoma / speed 1
3. Add pumpkin, leek and carrot and chop for 15 seconds / speed 7
4. Add stock and cook for 20 minutes / 100 degrees / speed 1
5. Add coconut cream, and blend for 15 - 20 seconds, increasing speed slowly from speed 1-9
6. Garnish with basil and/or chives, cracked pepper and crumbled goats cheese (if using).

careful not to try and pulse the soup if you have too much liquid. tip the liquid into a separate bowl and return enough liquid back into the bowl so that it covers the blade, pulse then put in the thermo server until you've pulsed all the liquid.

Lovely I added the coconut during cooking process didn't,t change the flavour. Thankyiy
A lovely healthy alternative to plain pumpkin soup, the cocnut cream really made it I did notice that it never said where to add the water but added it in prior to the cooking phase as per my logical thinking hahaha. I also reduced the amount of water to 400 as i like a thicker soup. I will definetly make again.

Tweaked this just a little using chilli OO instead of plain and coconut milk instead of cream. Really nice. I also halved the water. Printing to add to the book.
