Ingredients
- 20 g unsalted butter
- ½ medium brown onion in quarters
- 5 cmpiece fresh ginger cut into coins 2 mm thick
- 4 star anise, pods (or 2 teaspoons pieces)
- 1 kg sweet potatoes, peeled and coarsely chopped
- 2 Tablespoons TX stock
- 1250 g water
- 125 gheavy cream or light cream (optional)
- 5 tablespoonssour cream or crème fraîche

- Put ginger into bowl and mill speed 6 for 4 seconds. Set aside but
leave about 1/4 teaspoon in bowl. Add sour cream, mix speed 3 for 10 sec. set
all aside. - Add onion to bowl. Chop speed 5 for 3 sec. Scrape down bowl.
- Add butter, sauté for 3 minutes, temp 100 C, speed 2. Season with
freshly ground black pepper. - Add the ginger, star anise, sweet potatoes, stock and water set
time 20 minutes, temp 100 C, speed 1. Remove MC when temp reached. Continue
cooking uncovered, until the sweet potatoes are completely tender. - Remove the star anise pods and discard. Process the soup by slowly
increasing speed to 8. Process until very smooth about 20 sec. Season with
additional salt and pepper as necessary. Stir in the heavy cream, if using. Set
speed to 2 and pour cream through hole in lid. - Serve the soup in warmed bowls, topped with a dollop of ginger
cream.

Yum! Didn't have enough sweet potato, so added white sweet potato & carrots, so had to cook for a little longer. Didn't add quite as much water as it wouldn't fit in thermy bowl. Family all agreed it was delish!! ( we are fans of star anise!) You didn't mention how to make ginger cream, though. I've saved this recipe to my faves- thanks!
