Ingredients
Sweet Potato and Leek Soup
- 130 g leek, in 5cm sections
- 1/2 onion
- 1 clove garlic
- 20 g olive oil spread
- 350 g sweet potato, roughly chopped
- 380 g water
- 20 g TM stock concentrate
- 100 g coconut cream
- cracked pepper, to taste
- Himalayan salt, to taste

1. Place leek, onion and garlic in Thermomix bowl and chop for 5 seconds / speed 5. Scrape down bowl
2. Add oilive oil spread and saute for 5 minutes / 100C / speed 1 with MC out
3. Add sweet potato and cook for 5 minutes / 100C / speed 1
4. Add water and stock and cook for 15 - 17 minutes / 100C / speed 2
5. Puree for 45 seconds / speed 8
6. Add cocnut cream, salt and pepper and cook for a further 1 1/2 minutes / 100C / speed 1

Tip
For a ginger hit, add a 1 - 2 cm chunk of ginger to step 1

Super yum (added zucchini, cumin & chilli as suggested below). Very easy. Nice garnished with seaweed, and black sesame seeds to increase nutrition, and a decent sourdough 😁

Can't go wrong with this recipe and you don't need to be exact with the quantities, either. Made it many times. Sometimes I've added too much sweet potato, another time after starting to make it I realised I didn't have enough sweet potato so added in ordinary potato. It doesn't matter if you don't have stock made, just use store bought liquid stock. I add bacon, because bacon makes everything better. I use dairy cream instead of coconut cream and have short cut the process by adding the cream after the potato has cooked and blending in the one step. Today I was going to tell a friend I also had sweet potato soup, only mine had leek, only to realise I'd forgotten to add the leek!

I added 100g zuchinni with the onion, and 1/2tsp cumin powder and 1/4tsp chilli powder. Absolutely beautiful soup, its saved in the favorites! Even better the next day when its had time to develop in flavour ) thank you

Beautiful Soup. Doubled recipe and added 2 teaspoons of curry powder, 1-1/4 teaspoons cumin and 2 celery stalks. Replaced Coconut cream with standard cream, used TM chicken stock concentrate. Will become a favourite in this household
