Ingredients
- 60 grams kale leaves
- 7 slices Short Cut Bacon Rashers
- 2 eggs
- 1 clove garlic
- 60 grams parmesan cheese cubed
- salt
- 200 grams Self Raising Flour
- 100 grams Milk

Add the kale to the jug and chop for 30 seconds on speed 8.
Empty into a bowl then add bacon and chop on speed 9 for 15 seconds, break the 2 eggs in add a pinch of salt and the chopped kale and stir for 10 seconds.
Empty this into a bowl then put 1 clove garlic and 60g parmesan cheese cubes in the thermomix jug on speed 9 for 20 seconds.
Scape out the galic and cheese add it to the bowl of chopped kale,bacon and egg mix, set aside.
Lastly place flour and milk into the jug, and combine on speed 9.
I did not measure the amount of flour or milk when i was making this breakfast dish, hubby and kids were impatient for braskfast.
The idea is to form a thick batter, it may look too little when formed but i scraped the batter out with a spatula, added it to the bowl of chopped ingredients and lightly folded it in.
Fry on the stove top, i used spray and cook and same as pancakes on low heat, flipped it a few times for even cooking.
One of the reasons for creating this recipe: my family wont touch kale, and since its a healthy super food, i had to be creative, and on the spot just added what ingredients was in my fridge.
Tip
Use any veg you have like mushrooms or a zucchini.
