Ingredients

  • 1 onion brown
  • 2 clove garlic
  • 20ml --- olive oil
  • 2 bunches spinach
  • 1/2 teaspoon Nutmeg
  • 2 eggs
  • 500 grams ricotta cheese
  • 150 grams goats cheese
  • --- pepper
  • 8 sheets Puff pastry

Recipe's preparation

  1. 1. Place onion, garlic and parsley in mixing bowl and chop 3 sec/speed 5.


    2. Add oil and sauté 3 min/Varoma/speed 1. Set aside.


    3. Place washed spinach leaves in mixing bowl. Chop 5 sec/speed 5. You may need to do this on two batches. Add nutmeg. Wilt 3 min/Varoma/speed 1. Set aside. 


    4. Place eggs, ricotta, goats cheese and freshly ground black pepper in mixing bowl. Mix 10 sec/speed 5. 


    5. Add onion mixture and spinach and mix 5 sec/speed 3.


    6. Cut each sheet of puff pastry into 4 squares. Cut each small square into 2 triangles. Place 2 tbsp mixture on one triangle and press another on top to close.  Brush tops with beaten egg. 


    7. Bake in 200 degree oven for 10-15 min until golden.

    Quite nice we made rolls instead of triangles (only used 5 sheets of pastry) - Used cheddar cheese instead of goasts cheese and did that at step 4 first speed 5 for  3 seconds.We also used 500g frozen spinach and defrosted it and squeezed all the water out of it.  kids thought a little too much spinach so next time would use more ricotta cheese and probably a sheet or 2 of extra pastry.. Also took alot longer to cook - we turned ours over at 12 mins to brown the other side for another 12 mins
