Ingredients

Muffins

  • 120 grams Tasty cheese, cut into small cubes
  • 1/2 brown onion
  • 85 grams unsalted butter
  • 3 --- Rashers of Bacon, roughly chopped
  • 280 grams Self Raising Flour
  • 220 grams full cream milk
  • 1 egg
  • 1 pinch salt
  • 20 grams raw sugar
  • Keens Curry Powder, For sprinkling on top of muffins before cooking

Recipe's preparation

    Muffins
  1. Pre-heat oven to 180 degrees celsius and grease a 12 hole muffin tray 

  2. Add cheese to bowl and grate 5 seconds, speed 7. SET ASIDE and rinse bowl out.

  3. Chop onion 3 seconds, speed 7 

  4. Add butter and bacon and saute 2 minutes, 100 degrees, speed 1 

  5. Add all other ingredients including grated cheese and mix 6 seconds, speed 5. Scrape down side of bowl and repeat until just combined.

  6. Spoon into muffin tray. Sprinkle with small amount of Keens curry powder.

  7. Cook for around 20 minutes until cooked through.

Tip

Pull these straight out of oven and serve piping hot with butter tmrc_emoticons.)

This recipe is from one of my friends "Mel" and I would always request them when I came over for a coffee! You can chop the bacon in theThermomix but I like it a bit chunkier so do it by hand.

    Yummo. Great for kids snacks. I used half wholemeal SR and half plain SR, omitted the sugar, and put the curry powder in the mixture and added carrot, and they are so moist and tasty. Thanks

    These were great. I did half batch with salami and half with ham and pineapple with some honey BBQ sauce mixed in.

    I just made them and I followed suit with everyone else and made it mine. No sugar but i used beetroot. No bacon so i used cabonossi? I don't like curry so none of that either. Still looks great and tastes amazing. Thanks so much for sharing.

    I left out the sugar amd curry powder but added kale at the sautee section with the bacon and onion. Kids like them.

    A fabulous recipe! The only change I made was I substituted full cream milk for skimmed milk. They still came out so tasty and you couldn't tell I had changed the milk! So fluffy and perfect combination of flavours, nothing over powering. Thanks 👍

    Very nice! I didn't pay attention to what I was doing and at step 5 had the dial up at 9, lol. But all the flavours were there and it was fun for my friends to try to pick the ingredients! Thanks for sharing.

    Replaced bacon with about 3/4 cup of mixed vegetables like zucchini, capsicum, cooked pumpkin & corn kernels. Add all except corn at step 3 and blitz with onion, add corn kernels after.  Also replaced butter for olive oil and scattered feta cheese over the top once mixture was spooned into muffin tin. In step 5 mix on setting 4 in reverse. Makes for a tasty vego option!

    These were really yum and both (very fussy) boys ate them. Just need to figure out a way to sneak more veg in without affecting the lovely texture.
