Ingredients

- 100 g linseeds (flaxseeds)
- 80 g mixed seeds (pepitas, sesame, sunflower)
- 1/2 tsp fennel seeds
- 25 g coconut oil
- 1/2 tsp salt
- 1/2 tsp thyme, dried
- water for soaking

Place linseeds (flaxseeds) in a small bowl, cover with water and soak for 2 hours
Place mixed seeds in a separate container, cover with water and soak for 2 hours
Preheat the oven to 180C
Place fennel seeds in TM bowl and pulse/turbo 2-3 times/1 sec each
Drain mixed seeds and add to TM bowl
Drain linseeds (flaxseeds). Not much will drain away and the remaining soaked mix is a rather slimy consistency. Add this to the TM bowl on top of the mixed seeds
Pulse/turbo 3-4 times/1 sec each until the seeds are broken up and mixed together. Some will remain whole but you want that.
Add coconut oil, salt, and thyme. Mix 10 secs/sp 3
The easiest way to roll out the dough is to divide it in half and roll it between two pieces of baking paper using a rolling pin. You can score the rolled dough with a knife before baking or you can leave it whole and break it into random shapes instead.
Bake 20 minutes or until golden (depending on how thin you have rolled it)
When cool break into pieces and store in an airtight container

These were amazing... I just need to tweak them so the aren't as crumbly.
Delicious!! Just tried these at TM cooking class and so good. Plan to cook them this weekend for family gathering (with roast eggplant dip!!!)
