Ingredients

Streusel Topping

  • 45 grams brown sugar
  • 40 grams almonds
  • 25 grams Coconut
  • 1 tsp cinnamon

Muffin

  • 170 grams water
  • 50 grams bran flakes
  • 200 grams plain yogurt
  • 1 egg
  • 60 grams oil
  • 2 small bananas or 1 1/2 large
  • 190 grams Flour (plain)
  • 45 grams brown sugar
  • 1 1/2 tsp baking soda

Recipe's preparation

    Streusel Topping
  1. Place Almonds in TM bowl and Mill 3 Seconds speed 4

    Place  coconut, brown sugar and cinnamon Mill 4 seconds speed 4.

    Set aside to sprinkle on top of muffin.

  3. Place Water in TM bowl and bring to boil  3 minutes/ Varoma speed 1

     

    Add Bran and Stir 3 seconds/ speed 3. Let stand for 5 minutes with lid off to cool .

     

    Add Yogurt, egg, oil,sugar & smashed bananas and mix Speed 4/ 4 seconds

     

    Add sifted flour and baking powder. MixDough mode"Dough mode" 30 seconds.

     

  4. Spoon into greased muffin tins. Sprinkle with Streusel  Topping and mix in lightly into top with fork.

     

    Place in a preheated  190  Degree oven for 20 minutes

     

    Stand for a couple of minutes - loosen in tin and cool.

Tip

These are great to use up left over bananas.

Make a batch freeze them and  have on the run for breakfast or a mid day snack.

    Absolutely lovely - I didn't have bran flakes so used half cornflakes and half rolled oats. Eaten warm with greek yoghurt - scrumptious.
