- 100 grams Butter
- 160 grams Self Raising Flour
- 80 grams Coconut
- 120 grams sugar
- 2 eggs
- 150 grams currants

Preheat oven to 200 degrees celcius.
For slice: Line a slice tin (approximately 15 x 15cm) with baking paper.
For biscuits: Line 2 baking trays with baking paper.
Place butter in mixing bowl and melt at 50 degrees, speed 4 for 1 1/2 - 2 minutes, scraping down sides of bowl halfway through.
Add flour, coconut, sugar and eggs to bowl and mix on speed 5 for 10 seconds.
Add currants and mix speed 2 for 10 seconds.
For slice: Press mixture into lined slice tin and bake for approximately 15 minutes or until golden. Cool and cut into slices.
For biscuits: Place dessertspoonfuls of mixture onto trays, leaving room for spreading (about 9 biscuits per tray). Bake for approximately 10 minutes or until golden. Cool on a wire rack.
Tip
This recipe is super easy - if you have a bit more spare time, make biscuits, but if you are in a hurry just press into a tin for a delicious slice.
You can substitute sultanas for the currants if desired. The biscuits in the photo were made with sultanas and the slice with currants.

It's so quick and easy (we do it as a slice) and you can change it up and add whatever you like
We are nuts and seeds sometimes or do a apricot and saltana mix!
