Ingredients

Choc Chip Cookies GF/DF

  • 125 g coconut oil or butter, cut into chunks
  • 1 egg
  • 11/2 Cup Buckwheat flour
  • 1/2 cup coconut sugar
  • 1 tsp baking powder GF
  • 1 tsp Vanilla powder
  • 1/2 tsp sea salt
  • 20g water or milk
  • 80-100 g Enjoy Life Semi-sweet Chocolate Mini Chips or 70% Dark Choc, coarsely

Recipe's preparation

    Method
  1. 1. Preheat oven to 160 degrees and line a baking tray with baking paper

    2. In Thermomix bowl, add coconut oil and beat at 60 degrees/1 min /speed 2, then add egg and continue to mix for 20 sec / speed 3

    3. Add buckwheat flour, coconut sugar, baking powder, vanilla powder, sea salt and mix on 30 sec /speed 3. If mix is a little dry add 20g of water and mix again for another 15 sec / speed 3.

    4. Add chocolate chips and mix for 20 sec/ Reverse/ speed 2

    5.Spoon tablspoons of mixture into balls and place on the lined trays, then press down slightly

    6. Bake for 15-20mins until lightly golden. 

    Transfer to a wire rack to cool.... Enjoy with a nice cuppa tea!

    Store in an airtight container.

    Easy, yummy.

    I only had 80g of coconut oil left so used butter to top it up. Used 120g of choc chips (mixed milk and white) and milled the buckwheat before starting the recipe.

    Made these with Nuttelex instead of butter and used raw sugar as had no coconut sugar. Recipe worked really well despite my reservations about heating nuttelex while beating then adding egg.
    We will use these for my daughters milk ladder challenge. We needed something that was wheat and soy free with just a dash of milk.

    Great recipe! So good!!

    One question, do you think I could make it then freeze the dough? Then just defrost and cook as normal.. would this work?

    Thank you for this recipe it's fab. I have had coeliac disease for over ten years now and I haven't been able to find a thermi recipe that doesn't make the cookies look like pancakes. These look good and taste great. Thanks for sharing
