Ingredients
Vi's lemon crumble muffins
- 1/2 Lemon peel
- 50 grams almonds
- 100 grams plain flour
- 5 grams Vanilla Paste
- 80 grams raw sugar
- 70 grams melted butter, slightly cooled

- 2 teaspoons baking powder
- 100 grams raw sugar
- 2 eggs
- 100 grams yoghurt
- 1/2 lemon zest, grated
- 180 grams melted butter, Slightly cooled
- 120 grams Lemon curd

- **Before starting this recipe, have a jar of lemon curd ready. I use the recipe from cookidoo. nom nom nom
Preheat oven to 180°
Line 16 cupcake/muffin cases into muffin pan
Add to mixing bowl, 1/2 lemon peel, almond, 100g plain flour and vanilla paste
Lid & MC on
Turbo 1.0 x 4 - Add sugar & melted butter
Lid & MC on
Turbo 1.0 x 2
Pour crumble into a separate bowl and set aside - Do not wash the mixing bowl... those words are music to my ears!!
Add to mixing bowl, 180g plain flour, baking powder & raw sugar

10sec/sp4 - Scrape down sides
Add to mixing bowl, 2 eggs, yoghurt, lemon zest and melted butter

12sec/sp5 - Add lemon curd and gently hand mix the lemon curd with muffin mixture with spatula
Divide the mixture between the muffin cases (they should only be half full) spoon over a heap of your crumble and bake for 20 mins.

Wonderful recipe. I used gluten free flour in place of normal and almond meal in place of almonds. I used half the lemon curd in the recipe and put a teaspoon of curd on top of dough before I added the crumble topping. Delicious!
