Ingredients
Dough
- 1 orange, peel only
- 435 g Milk
- 90 g Butter
- 5 cardamom pods, whole, bruised
- 1 clove, whole
- 14 g dry yeast, equiv: 2 sachets
- 775 g bakers flour
- 1 tablespoon bread improver
- 120 g caster sugar
- 1 teaspoon ground nutmeg
- 3/4 teaspoon ground ginger
- 1 tablespoon ground cinnamon
- 260 g sultanas
Paste for crosses
- 6 tablespoon plain flour
- 4 tablespoon water

Remove the rind off an orange with a peeler and blitz in TM Bowl – 20 secs, speed 10. Scrape down and repeat for 10 secs if needed. Scrape down.
Add milk, butter, clove and bruised cardamom pods. Melt butter and infuse milk with spices - Mix, 3:30min, 60 deg, speed 1.
Remove TM lids and let milk cool to 37 degrees, then remove cardamon pods and clove (strain through basket into a bowl and return milk and any orange zest back to TM bowl)
Add 14gms (2 sachets) of dried yeast and mix 20 sec, speed 2
Add flour, bread improver, sugar and spices to milk mixture and mix 20 sec, speed 5
Knead dough on dough/interval "Dough mode" mode for 8 mins
Turn dough out onto Thermomat (or similar) and hand-knead the sultanas into the dough
Rest dough for 15 mins in an oiled bowl covered with glad wrap (or in the TM bowl)Describe the preparation steps of your recipe
Once dough has proven, add the paste ingredients to a clean TM bowl and mix 20 seconds, speed 5, scrape down and repeat. Put the sticky paste mixture into a piping bag with a small nozzle and pipe horizontal and vertical lines through the centre of the buns.Describe the preparation steps of your recipe
Place buns into the preheated (180deg) oven and cook for 15 mins. Then brush milk over and place back into the oven for a further 20 mins or until buns are a rich golden brownDescribe the preparation steps of your recipe

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
