Ingredients
- 150 grams sugar
- 1 orange peel
- 1 level teaspoon ground mahlepi
- 80 grams Butter
- 100 grams Milk
- 2 sachets dried yeast
- 1 level teaspoon bread improver
- 3 eggs
- 550 grams bakers flour
- 1 level teaspoon baking powder
- 1 egg, for egg wash

place the sugar, orange peel and mahlepi in the bowl and pulvrise on speed 9 for 10 seconds.
place the butter and milk in the bowl and mix for 2 minutes, 60 degrees on speed 3.
add the yeast, bread improver and eggs. Mix for 30 seconds on speed 6.
finally add the flour and baking powder. Mix for 6 seconds on speed 6 before kneading on "Dough mode" for 3 minutes.
Turn the dough into a bowl and place it into a warm spot such as a warm oven. Allow the dough to double in size. Once the dough has doubled in size, then separate into 3 or 4 segments, depending on how many tsourakia you wish to bake. Shape each piece. Greek tsourekia are traditionally plaited.
Place the tray with shaped bread into a warm environment and allow to rise again. Do not rush this stage. Once your breads have doubled in size again, brush with beaten egg and sprinkle with either sesame seeds or flaked almonds. Bake in a moderate oven, 180, for 20 minutes.

Made these last night for Greek Easter and they were amazing!
I added 3 pieces of mastic at step 1. I made 4 mini tsourekia and I cooked them for around 18 min. They didn't rise much during proving, but did rise in the oven.

This recipe was fantastic! Worked very well, did not have bread improver so I replaced it with orange juice💕Initially I didn't think it worked very well cos it did not rise that much, but I put it in a cold oven and it expanded💕the flavor was great and this recipe made three good size Tsourekia

This unfortunately didn't work well for me. Even though I allowed it to rise for 2 hours on both occasions in a warm oven, it was still quite dense and doughy. I also had to cook it for 40 minutes (which is interestly what all other recipes suggest anyway) as it was uncooked in the middle at 20 minutes.
Great recipe. The tsourekia ( three of them) turned out perfect ....they look and taste delicious. This recipe is a keeper. Just a small addition I added mastiha in step 1. Thanks for recipe

Thank you so much for this very easy recipe. I am absolutely thrilled. I have never made these before but love the flavour of Mahlepi. These turned out perfect. Four beautiful plaits. We have eaten half of one plait and it hasn't even cooled down. I have to make more. I put them in a cool oven at 170 fan forced for 30 mins. The egg wash makes them quite brown. I wonder if I should use milk with just a little egg next time.
