I'm cooking this todayRecipe's preparation
Soak apricots in cold water for about 2 hours. This makes them nice and soft (Thank you to my friend Michelle for that tip!).
Drain off all water, rinse and pop into bowl.
Add coconut and honey.
Blitz slowly up to speed 7 for approximately 30 secs.
You want a nice dough to form and be able to roll a ball in your hands. Blitz a little longer if the dough is dry.
Roll into small bite size balls and roll in coconut.
I keep mine in a jar in the fridge.

Great recipe
Didnt soak apricots
Used only 100gms coconut
easy to roll,really easy
So easy and tasty, thank you . I didn't add honey, and the mixture was a fine consistency for rolling. Child 8 thought they tasted "too apricoty", so perhaps next time I might try adjusting quantities or trying the almonds as per the suggestion above.
The kids loved them and so easy to make. Thank you.
My girls and husband really liked these and very simple to make
Easy and delicious!
These were an absolute winner in our household, they only lasted 2 days! Kids loved them and I will definitely be making them regularly for school lunchboxes! Thanks for posting this recipe!
Great little snack and perfect recipe to get the kids to help! Thanks for sharing
I added almonds too (from the tip below), tried this as I'm not a huge fan of coconut and gave it such a great nutty flavour
My very picky son loves these! Thank you
These are great. I only use 150g of coconut though as they tend to stick together better.
