Ingredients
Chai Cupcakes
- 100 g Butter
- 60 g castor sugar
- 80 g honey
- 2 eggs
- 150 g Milk
- 1 1/2 teaspoon vanilla essence
- 320 g SR flour
- 1 pinch salt
Chai Spice Mix
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground cloves
- 1 teaspoon ground cardamon
Honey Butter Icing
- 125 g unsalted butter
- 250 g icing sugar
- 2 teaspoon hot milk
- 3 tablespoon honey

Preheat oven to 180 degrees and place cupcake papers in muffin tin and set aside
Mix spices together in a small bowl and set aside
Add butter, sugar and honey to TM bowl and mix 10 secs/speed 5
Insert butterfly mix 2 mins/speed 4 until light and fluffy
Add eggs, vanilla and salt and mix until combined
Add milk, flour and spices and mix 2 mins/speed 5 until combined and smooth
Spoon mixture into prepared cupcake papers and bake for 15-20 mins or until golden brown
Icing
Place butter, icing sugar, milk and honey into TM bowl and mix 60 degrees 1 min/speed 4 until smooth
Place in fridge for approximately 15 mins to set alightly before piping onto cooled cupcakes
Sprinkle a little extra spice on top of piped icing and drizzle with a little honey

Tip
Remeber to set aside some spice mix for decoration

One of my favourite TM recipes. Easy to make and super yummy. My 9 year old likes to make them too.
The icing turned out well. Don't know if I made a mistake with the cupcakes, but cupcakes turned out with big air bubbles in the bottom and very dense on the top.
