Ingredients
Puddings
- 150 g dried figs
- 50 g Glacé ginger
- 300 g water
- 2 teaspoon Bi Carb Soda
- 150 g sugar
- 60 g Butter, softened
- 2 eggs
- 1 teaspoon vanilla essence
- 170 g SR flour
Sauce
- 250 g cream
- 80 g brown sugar or rapadura
- 40 g Glacé ginger
- 1 teaspoon vanilla essence

Place figs & ginger into TM bowl and chop for 8 secs on speed 7
Add water into TM bowl and cook for 5 mins at 100 C on speed 1
Mix for 10 secs on speed 4
Add the bi carb to the mixture and stir for 3 secs on speed 2. Transfer mixture into seperate bowl and set aside.
Clean & dry bowl
Add sugar into the TM bowl and pulverise for 20 secs on speed 9
Insert Butterfly
Add softened butter and mix for 10 secs on speed 4. Mix until light and creamy for approx 1 min on speed 4. Continue mixing and add 1 egg at a time along with the vanilla essence. Remove Butterfly.
Add flour and the fig mixutre and mix for 5 secs on speed 4
Pour cake mixture into individual ramekins or silicon cup cake moulds and place into varoma and top tray. Place on outside edges to avoid water condensation dripping onto your puddings from under the lid. Cook at varoma temp for 20 mins
Place upside down on a serving plate and cover with Cream Ginger Sauce
Place sugar and ginger into TM bowl and pulverise 20 secs on speed 9
Add all other ingredients and cook for 5 mins at 80 C on speed 4
Pour hot over puddings

Yummo! Beats sticky date pudding anytime! I baked mine in the oven and they were still light a fluffy.The next day, I steamed them in the varoma for 5 minutes and they were still fabulous. Thank you for a great recipe
