Recipe's preparation

    Step 1
  1. Line the base and sides of a lamington tin with baking paper. Allowing it to hang over edges.

  2. Step 2
  3. Roughly chop the biscuits and clinkers with a large knife (if you do this in the Thermomix it will be too fine). Set aside in large mixing bowl.

  4. Step 3
  5. Place all other ingredients into the Thermomix jug and melt for 3 mins/temp 50/sp 4.

  6. Step 4
  7. Working quickly stir this into the biscuit mix and spoon into prepared lamington tin. Press down with the back of the spoon (it doesn't have to be perfect).

  8. Step 5
  9. Refrigerate for 2 hours or until firm. Cut into squares and serve.

Tip

Store this in the fridge

Wow, made this today for our school easter parade. I made it gluten free with gf tea biscuits and used marshmallows as I couldn't find gf clinkers. Delicious and very decadent. I think it will sell quickly at the parade on Friday. Until then it's in the freezer hidden from the kids and hubby.
