Lemon Cheesecake Protein Balls

  • 1 Lemon Zest of 1 Lemon
  • 130 g Cashews, raw
  • 50 g Shredded Coconut (or dessic)
  • 35 g Natural Pea Protein
  • 35 g Maple Syrup (pure)
  • 50 g water

Recipe's preparation

    Lemon Cheesecake Protein Balls
  1. Peel the zest of 1 lemon and place into bowl, Mill 1min/Sp10.  Scrape down sides of bowl.

     

    Add in Cashews, Coconut, Protein Powder, Mayple Syrup, Turbo 1.5sec.  Scrape down sides of bowl.

     

    Add in Water, Mix 10sec/Sp5 or until combined

     

    Roll into balls & roll in Coconut if preferred. 

    Store in fridge.... Enjoy tmrc_emoticons.)

     

     

Tip

I use Pea Protein to make these a Raw Protein Ball but you can use your favourite type of protein powder. 

If making for children, omit the protein powder & water.

To increase the protein you can roll in Chia and or Flax seeds

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     These were delightful! I didn't have any protein powder so I added 20g chia seeds to give it a dry element. I also added the juice from the lemon I used for the zest and then made up the rest of water. Thanks for sharing!

    Yum, just changed it from lemon to orange protein balls...

    Swapped the lemon zest for orange zest (I grated just the orange part and placed into thermie), and I swapped the water for orange juice. Orange protein balls!

    These are so delicious but I think the water makes them too wet. I had to add chia seeds and more protein to be able to bind it more. Next time I'll leave the water out and possinly double the recipe. Only makes about 6 med size balls. Yummy!
