Ingredients
Base
- 140 g Nuts
- 160 g dates
- 1 tsp water
- 40 g coconut oil
- 10 g cacao powder
- 10 g Shredded coconut
- pinch Himalayan salt
Filling
- peel of 1 lime
- 160 g Cashews, soaked for 30 minutes
- 110 g coconut cream
- Juice of 1 lime
- 20 g Coconut Syrup
- 1 vanilla bean pod, seeds scraped

1. Place nut in Thermomix bowl and mill for 10 - 15 seconds / speed 8. Set aside
2. Place dates and water into Thermomix bowl and blend for 10 seconds / speed 7
3. Add nut flour, coconut oil, cacao powder, shredded coconut and Himalayan salt and mix for 10 - 20 seconds / "Counter-clockwise operation" speed 3
4. Press filling into a silicone muffin tray or mini tart tray. Refrigerate for 1/2 an hour
1. Place lime peel in Thermomix bowl and blitz for 10 - 20 seconds / speed 8
2. Add cashews and blend for 30 seconds / speed 8.
3. Add coconut cream, lime juice, coconut syrup and vanilla seeds and blend for 2 minutes / speed 6, scraping down sides once or twice during this time.
4. Fill the bases with the filling and allow to set in the fridge for 2-3 hours.
