Recipe's preparation

    Melt butter 2min/50c/1
  1. add flour,sugar,coconut
    10sec/speed4
  2. Scrape down sides
    10sec/speed4
  3. Press mixture into spring form tin nice and evenly
    bake in preheated oven at 180 for 10 min
  4. Clean Closed lid"Closed lid"
  5. Add rind of one lemon pre frozen and blitz until desired texture I do it speed 9/ 5 sec
  6. place coconut sugar in Closed lid"Closed lid" speed 9 / 10 sec
  7. Add butterfly whisk add cream cheese and lemon rind 30 sec/speed 5 until soft
  8. Add cream 30 sec /speed 4
  9. Melt on stove gelatine and lemon juice when melted
    turn thermomix on with creamy filling and pour through hole in lid until smooth watch it I do about 10 sec on speed 3
  10. Put on cooled base put in fridge until set
  11. Jelly topping
    I just make in a glass bowl add jelly crystals and one cup of boiling water until dissolved then add 1 cup frozen berries to cool it down when cream filling is set ,pour slowly over filling and put back in fridge until set enjoy
