Cake
- 3 eggs
- 1/3 --- Cups blackstrap molasses
- 1/2 Cups Coconut Oil
- 1 tsp vanilla extract
- 1 tbsp Raw Honey
- 3 Cups almond meal
- 1 tsp baking soda (bicarb)
- 1/2 tsp baking powder
- 2 tsp ground ginger
- 2 tsp ground cinnamon
- 1/4 tsp ground cloves

In TMX bowl, combine the eggs, molasses, coconut oil, vanilla and honey and beat well Speed 5, 30 seconds.
Add to TMX bowl the rest of the ingredients and mix well, speed 6, 30 seconds.
Spread the batter in a small coconut oil greased pyrex dish.
Bake at 180 20 minutes THEN reduce heat to 110 and bake an additional 20-30 minutes until edges are brown and center firmed up.
Let cool completely before cutting.

Made this for afternoon tea with a friend who is gluten and dairy free. Measurements from Skinnymixers website, which I’ve just found 3 days after making this recipe -
330 g raw almonds
80 g blackstrap molasses found in health food stores
70 g coconut oil or butter
40 g honey or sweetener of choice
Much loved in our house. Just need to remember to turn the oven down half way through.

In the oven and it smells amazing! For reference 1/3 cup molasses is 100grams. 1/2 cup coconut oil 115grams. 3 cups almond meal is approx 285 grams.
OMG Nik this is out of this world both hubby and I loved it I used sugar free maple syrup to replace honey as didnt have any I will be def making this again
Why use almonds when the Thermomix makes it in seconds from whole almonds. The recipe looks great and will be a nice treat tomorrow afteroon
