Ingredients
ice cream
- 300 g sweet potato, Peeled and cubed
- 150 g thickened cream
- 100 g full cream milk
- 50 g brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon Nutmeg
- 4 egg yolks
- 20 g shelled pistachios

Place sweet potato into jug and chop 5 seconds / speed 7.
Add cream, milk and sugar and cook 12 minutes / 90 degrees / speed 2.
Add nutmeg and cinnamon and blend for 40 seconds / speed 7.
Scape sides of bowl and cook for 4 minutes / 60 degrees / speed 3. Over the first minute, add the egg yolks slowly, one at a time.
Once cooked for 4 minutes, pour into a bowl then freeze for 8 hours.
Blend for 1 minute / speed 9 with the aid of the spatula to get all the lumps out. Insert butterfly and whip for 1 minute / speed 4.
Serve immediately or return to the freezer for a harder set ice cream.

Tip
This is a base recipe, add whatever flavours you like to it. Try chopped pistachios or other nuts, choc chips, differnt spices like cardamon, add dried fruit or serve with cake or other desserts.

I was reminded of your facebook page at the consultants roadshow last week, and while revisiting your facebook page came across this. Decided to give it a try and pleasantly surprised - tastes great!! Whole family were fans and Miss 5 said it might be a little better than chocolate ice cream - which is a pretty big call for a little kid!!! The cinnamon and nutmeg definitely made it - yum! oooh and I made it dairy free with coconut cream subbed for the milk and cream.
