Ingredients
Sauce
- 1 red capsicum, roughly chopped
- 1 onion, halved
- 5 cloves garlic
- 1 red chilli, (deseeded for mild version)
- 50 g palm sugar
- 5 leaves Kaffir Lime
- 1 tsp salt, adjust to taste
- 1 tbsp tamarind puree
- 20 g olive oil
Main
- 300 g water
- 300-600 g Chicken breast/thigh and/or Firm tofu, 3-4cm cubed
- 5 Small Potatoes, quartered
- 200 g coconut milk
Steamed vegetables
- Your choice of broccoli florets, chopped carrot or zuchinni, green beans
Steamed rice
- 400 g jasmine or basmati rice
- 900 g water

Place all Sauce ingredients except tamarind puree and olive oil into the mixing bowl and blend on speed 9 for about 5-10sec or until well blended.
Add the tamarind puree and olive oil and saute 3min/Varoma/speed 1.
Add 300ml water and insert TM basket filled with potato and chicken and/or tofu pieces. Then place lid on and cook 20min/Varoma/speed 2.
While that cooks you can add desired vegies to Varoma dish and place on top to steam as you go. Carrot, broccoli, green beans and zuchinni all go well.
Use spatula to gently break apart the chicken then add 200g coconut to TM bowl.
Cook a further 5min then transfer to ThermoServer (or serving dish) to keep warm while you make rice.
Give mixing bowl, basket and lid a quick rinse - no need to wash it thoroughly - and steam rice as per EDC (rinse 400g basmati or jasmine rice and cook with 900g water for 20min/100C/speed 4).

Made this with tofu and although I basically followed the recipe, except for only 3 cloves of garlic, and I used a whole chilli with seeds, the sauce wasn't particularly flavoursome. The tofu was nicely cooked. I'll try again. Thanks for the recipe.
