Ingredients

  • 500 g chicken breast, Cut into strips
  • 1 tbsp olive oil
  • 1-2 leek, Cut into rounds
  • 2 clove garlic
  • 1-2 carrots
  • 1-2 zucchini
  • 1 --- Head of Cauliflower, Cut into florets
  • 1 tbsp Vegetable stock paste
  • 1-2 tbsp Dijon mustard
  • 1 sheet Puff pastry
  • 1 egg yolk, lightly beaten

Recipe's preparation

  1. Prehead oven to 180C. Set aside some individual ramekins or one big oven proof ceramic dish. 

     

  2. Add the garlic cloves to the Thermomix bowl and chop for 5 Sec/Sp 5. On the stove top heat a large suacepan to medium heat. Add the olive oil and chicken and cook, stirring. Once the chicken is sealed, add the leek and garlic. 

     

  3. Without washing the Thermomix bowl, add the carrots and zucchini then chop them for 5 sec/Sp 5. Tip them into the saucepan with the chicken and combine, turning the heat right down. 

  4. Without cleaning the bowl, add the cauliflower. Chop for 5 Sec/Sp 6. Add enough water to cover the chopped cauliflower and the stock paste and cook for 15 Min/120C/Sp 1. 

    Occasionally stir the chicken to stop it from sticking. 

  5. Once the Cauliflower is cooked add the mustard then blend for 1 Min/Sp 5-6, increasing speed gradually. Tip Cauliflower sauce into chicken mixture and combine. 

    Tip this mixture into the ramekins or ceramic dish. Top with Puff Pastry and bush with egg yolk. 

  6. Bake in the oven for 20 min or until golden. 

Tip

You can make your Puff Pastry using the recipe from the BCB. I used a store bought Gluten Free Puff and it worked really well.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
