Ingredients

Lentils

  • 1 onion
  • 1 carrot
  • 2 sprigs rosemary
  • olive oil
  • 2 400g tins of lentils
  • 1-2 tomatoes
  • 200 grams spinach
  • 1 teaspoon red wine vinegar
  • 4 tablespoons natural yoghurt

Chicken

  • 4 skinless chicken breasts
  • 1/2 tsp cayenne
  • 4 cloves garlic, unpeeled
  • 1 handful fresh thyme
  • 6 rashes streaky bacon

Recipe's preparation

    Lentils
  1. Peel onion and carrot. 

    Put onion, carrot, and rosemary into TM with a small amount of olive oil. Chop for 4 seconds, speed 4. You may have to push it down and do another 4 seconds. 

    Cook onion, carrot, and rosemary for 5 minutes, 100d, Counter-clockwise operation"Counter-clockwise operation"

    Add 200g spinach to mixture, chop 4 seconds, speed 4. You may need to do this twice for the two handfuls of leaves. 

    Add lentils, tomatoes, and red wine vingar. Cook for 10 minutes, 100D, Counter-clockwise operation"Counter-clockwise operation"

     

  2. Chicken
  3. While lentils are cooking, heat frying pan.

    Put a large sheet of baking paper on your bench and scatter over salt, pepper, and cayenne. Rub onto the chicken.

    Fold the baking paper over the top of the chicken and use a rolling pin and flatten it to about 1.5 cm thick. 

    Get frying pan, add oil, and garlic cloves, herbs and chicken. Fry for about 4 minutes on each side until nicely golden and cooked through. Add the bacon to the pan.

  4. To serve
  5. Plate the lentils onto a warmed plate and swirl the yoghurt through. 

    Cut the chicken on an angle and place over the lentils with the bacon. 

    Serve with bread or pittas.

    First time I've cooked an unrated dish and glad I did. I did as per recipe but concurrently. I seasoned the chicken 1 st. I am lazy so sliced thinly and was perhaps, over generous with the cayenne (sprinkled on) the lentils need salt. Took a relaxing 25 mins .hand  Chop the tomatoes for texture. Thanks
