Ingredients
Ricotta and oregano Gnocchi
- 120 g Parmesan cheese, cut into 3cms pieces
- 500 g ricotta cheese, well drained
- 1 egg
- 1 egg yolk
- 60 g fresh oregano
- 100 g plain flour
- 1 onion, quartered
- 30 g pepperoni (hot salami), sliced
- 2 tablespoons extra virgin olive oil
- 800 g tomatoes, tinned
- 200 g cherry tomatoes, halved
- 55 g Kalamata Olives, pitted
- 150 g spinach

- Place parmesan in the mixing bowl. Grate 8 sec/speed 9 or until finely grated. Transfer 40 g to a small bowl and reserve.
- Add ricotta, egg, yolk and 2 toablesponns of the oregano. Season with salt and pepper. Mix for 5 sec/speed 5.
- Scrape down the side of the bowl. Repeat until well combined.
- Add flour, mix for 5 sec/speed 4 or until just combined. Do not overmix.
- Transfer mixture to a large bowl.
- Using floured hands, shape tablespoons of mixture into balls. Transfer to lightly oiled varoma tray and dish.
- Cover and refrigerate until needed.
- Clean mixing bowl.
- Place onion and pepperoni in mixing bowl. Chop for 5 sec/speed 5 or until coarsely chopped.
- Add oil, cook for 8 min/100/reverse/speed 0.5 without measuring cup in lid.
- Add canned tomatoes, cherry tomatoes, olives and remaining oregano. Season.
- Place Varoma in position. Cook for 15 mins/100/reverse/speed 0.5 or until gnocchi is cooked.
- Add spinach to mixing bowl and season. Cook for 2 mins/100/reverse/speed 0.5 until spinach is wilted.
- Serve gnocchi with sauce and spinach, sprinkled with parmesan cheese.
