Ingredients
- 1 brown onion, peeled and halved
- 3 cloves garlic
- 30 grams olive oil
- 1 lebanese eggplant, roughly chopped
- 1 zucchini, roughly chopped
- 1 carrot, roughly chopped
- 500 grams Beef mince
- 2 tablespoons vegetable stock, (see EDC)
- 2 tablespoons tomato paste
- 5 mushrooms, sliced
- 2 sprigs rosemary
- 5 sprigs Thyme
- 3 sprigs Italian parsley
- 400 grams diced tinned tomatos
- 100 grams red wine
- Salt and pepper, to taste

I'm cooking this todayRecipe's preparation
1. Place onion and garlic in TM bowl and chop 7 sec SP7
2. Add olive oil to bowl - cook Varoma, 6mins, SP2 (MC off)
3 Add eggplant, carrot and zucchini 3-5 seconds, SP7 (until roughly chopped but not to fine) and cook Varoma, 6 mins SP2 (MC off)
4. Add mince, tomato paste and stock, cook Varoma, 10 mins SP1 (occassionally use TM spatula to mix while cooking) (MC off)
5. Add sliced mushrooms, herbs, tinned tomatos, wine, salt and pepper to taste and cook Varoma, 10mins SP1. (occassionally use TM spatula to mix while cooking) (MC on)
6. Cook further on 100C, 5 mins SP1 (MC on)
7. Serve with your favourite pasta
Tip
Use a combination of pork and beef mince for a little extra flavour
Top with fresh parmesan cheese
