Ingredients
- 1 clove garlic, peeled
- 1 brown onion, peeled and quarted
- 3 teaspoons raw sugar
- 3 teaspoons olive oil
- 1 pinch salt, to taste
- 1 pinch pepper, taste
- 160 grams Cheddar cheese, cubed
- 3 sprigs basil, washed
- 2 sprigs Oregano, washed
- 3 sprigs Thyme, washed
- 4 small leaves mint, washed
- 110 grams ham
- 1 tablespoon mustard
- 4 eggs

1. Grease 1 muffin tray with spray oil and pre-heat fan-forced oven 180C
2. Add onion, garlic, sugar, oil, salt and pepper to TM bowl 5 sec SP4
3. Caramelise onion 10mins, varoma, MC on
4. Continue to caramelise 10mins, varoma, MC off
5. Put cheese, basil, oregano, thyme and mint in to TM bowl and chop 5 sec SP8
6. Add ham, 2 eggs and mustard into TM bowl and mix 10secs SP4
7. Add remaining 2 eggs and mix , 20 secs, SP2
8. Spoon in to muffin trays and bake 15-20mins or until golden brown
9. Serve hot or cold
Tip
Add bacon instead of ham or mushrooms instead of ham/bacon for a vegetarian version
