Ingredients
Nuggets
- 100 g Gluten fresh free bread / 2-3 slices
- 70 g Leeks roughly chopped
- 70 g carrot roughly chopped
- 2 sprigs parsley
- 1 clove garlic
- 400 g Raw chicken breast (chunks)
- salt and pepper to taste
- 2 eggs
- 300 g Dry Gluten Free Bread Crumbs

Place a few gluten free slices of bread in the oven on lowest temperature for 6-8 hours to dry out completely. Place in TM bowl once dry and grind until smooth crumbs. Save in Airtight containter until needed to use
Place fresh bread in TM Bowl. Chop until breadcrumb consistency. Set aside
Place all vegetables in TM bowl. Chop on speed 9 for 8-10 seconds (smooth consistency)
Add chunks of chicken in TM bowl. Turbo 3-4 times for 1 second at a time to mince the meat. (veggies still inside bowl)
Add reserved fresh crumbs and season to taste. Mix 15 seconds on speed 4
Mix 2 eggs in separate bowl. Place dried crumbs (made or store bought) in another bowl. Shape the chicken mince mixture in nugget shape. Place in egg and thereafter in crumbs. Place on oiled baking tray and bake in oven for 15 minutes at 180 degrees Celsius

Tip
Any vegetable can be used as long as quantities remain the same
Nuggets can be deep fried or shallow fried in pan in stead of on baking tray in oven
Mixture can be shaped in burger shape to create Chicken burger patties
