Egg pots
- 50 grams Parmesan cheese, cubed
- 2 Brown Onions, Peeled and halved
- 30 grams olive oil
- 2 red capsicums, Sliced thinly lengthways
- 1 yellow capsicum, Sliced thinly lengthways
- 400g can Diced tomatos
- 1/2 teaspoon saffron threads
- 1 teaspoon Cayenne pepper or to taste
- salt
- 150 grams cream
- 12 eggs
- 1 bunch chives

Preheat oven to 180degrees
Place Parmesan in TM bowl. Grate for 5 seconds on speed 8. Set aside.
Put onion in TM bowl . Chop for 5 seconds speed 5. Scrape sides of bowl down. Add oil, saute for 5 minutes, 100 degrees speed 1
Add capsicums, tomato, saffron, cayenne pepper and salt. Cook 20 mins on varoma, speed 1. Have measuring cup off and basket resting on top of lid.
Add cream, mixing for 10 seconds speed 2.
Divide between ovenproof dishes. Crack 2 eggs on top of each and sprinkle grates Parmesan on top. Bake until eggs are cooked to your liking and cheese is melted. Top with freshly cracked pepper, chives or other herbs
Tip
Cook an extra 4 minutes for a hard yolk.
